My mom was a wonderful cook and made everything from scratch and her green beans were a favorite side dish when I was growing up. She always canned green beans every year so we would have them all winter. This recipe is hers and I hope you enjoy her homestyle Southern Green Beans!
Sometimes my mom would use ham hocks instead of bacon when cooking green beans. I always use bacon since I have it on hand all the time.
Southern Green Beans
1½ to 2 pounds fresh green beans, rinsed and snapped
2 to 3 slices bacon
One or 2 slices of onion
salt and pepper to taste
Add enough water to cover green beans.
Add bacon and onion slices to green beans.
Bring green beans to a boil.
Cover and reduce heat.
Simmer for 2 hours or until beans are very tender.
Drain beans, salt and pepper to taste and transfer to a bowl.
