Mexican Chicken Casserole

I love cooking casseroles because they are so easy and most people in my family will eat them. I found this recipe on one of my favorite food blogs - SouthernPlate.com.

Christy from Southern Plate is from my hometown and in April 2011 when our area was hit hard by the tornadoes she was so sweet and shared some of her chicken stew with us! We were without power for seven days. And by we I mean the WHOLE city.

Christy was cooking for some of the volunteers and she made time out of her day to meet up with me and share some of her stew. She is the sweetest most down to earth person you will ever meet. She has one cookbook published and is working on the second one! I can’t wait till the second cookbook comes out. I love the first one.

Italian Pasta Bake

This is one of those dishes that’s perfect for taking to a church supper, family gathering or any social event. It’s also a quick and easy delicious meal to serve for dinner that your family will really appreciate!

My family likes just about any kind of pasta and I enjoy this recipe because it uses the medium pasta shells. You could easily add mushrooms and green peppers if you like or use provolone cheese with the mozzarella instead of Parmesan cheese.

Baked Ziti

Baked Zita is a easy delicious dish that everyone loves! This is a dish that I usually have the ingredients on hand to make just about any time. It’s quick but very filling and I usually serve with warm crusty bread and a simple salad.  You could add ingredients to this to make it your own such as black olives, mushrooms or green peppers. Lemon Chicken Tenders

If you love chicken tenders and are looking for a different way to cook them then try these Lemon Chicken Tenders! These are sure to be a family favorite.

Lemon Chicken Tenders

3 boneless, skinless chicken breasts, cut into 1/2″ pieces
2 eggs, slightly beaten,
1 cup Italian bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika
1/2 cup sugar
1/2 cup lemon juice
1 teaspoon curry powder

Preheat oven to 400 degrees. In mixing bowl, mix together paprika, salt, and pepper. Sprinkle seasoning over chicken. Dip chicken in egg and then dredge in bread crumbs. In aluminum foil-lined 15×10 inch jelly roll pan, arrange chicken pieces in single layer. Bake in preheated oven for 15 to 20 minutes, turning once.

Over medium-low heat in small saucepan, stir together sugar, lemon juice and curry powder. Stir until sugar dissolves. Drizzle lemon juice sauce over chicken and bake for 5 more minutes.
