This Chocolate Chip Cookie cake is a rich and delicious dessert that I like to serve with a scoop of vanilla ice cream.
Chocolate Chip Cookie Cake
1 stick of unsalted butter
1 ¼ cups of semi sweet chocolate chips
1 cup of all purpose flour
1 ½ teaspoon of baking powder
¼ tsp of salt
1 cup of light brown sugar
1 large egg
1 tsp of vanilla extract
Preheat oven to 350°
In a bowl, combine the flour, baking powder and salt.
In a mixing bowl use stand mixer to beat together the butter, light brown sugar and vanilla. Beat for 1 minute until well blended. Then beat on HIGH for 15 more seconds. Beat in the egg for 30 seconds.
On low speed, beat in the dry ingredients. Once dry ingredients blended mix in the chocolate chips.
Transfer the batter to a greased 9” cake pan and flatten it to an even layer.
Bake for 18 to 22 minutes.
Let cool then turn out onto a serving plate.
