Coconut Custard Pie Recipe
6 tablespoons butter
1/2 cup flour
2 cups milk
3/4 cup sugar
1 teaspoon vanilla
1 cup coconut, divided
whipped cream, optional
Preheat oven to 350F.
Combine the eggs, butter, flour, milk, sugar, vanilla, and 1/2 cup coconut in a blender and mix until blended.
Stir in the remaining 1/2 cup coconut. Pour into a greased 10″ pie pan.
Bake at 350F for 50-60 minutes or until lightly browned and set.
Serve chilled with whipped cream.
