This recipe is courtesy of Sharon Rogers who is in the Facebook Group "Appalachian Foods and Recipes" that I follow. There are so many great recipes posted there and hers are some of the best! She graciously allowed me to share this one and I hope you enjoy it.
Gingersnap Cookies Recipe
1/2 Cup soft butter (unsalted)
1 Cup sugar
1/3 Cup molasses
1 egg
1 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/2 tsp salt
1 1/2 tsp baking soda
2 1/4 Cup all purpose flour
1/2 Cup sugar for rolling
Directions:
Preheat oven to 350.
Cream butter and sugar together in a large mixing bowl.
Add eggs and molasses and beat until it is well mixed.
Combine all dry ingredients.
Add dry ingredients to butter and sugar mixture.
Mix until well combined.
Roll into 1" balls and roll each in sugar.
Place on lightly greased cookie sheet and bake at 350 for 13-15 minutes.
