Mexican Rice is a great side dish served with tacos, burritos or any other Mexican dish. Mexican food is my favorite and I could eat it everyday! This Mexican rice recipe is easy to make and delicious.
1 1/2 cups rice
1/4 cup vegetable oil
1 small onion, diced
1 clove garlic, minced
3 cups chicken broth
1 (8 ounce) can tomato sauce
1 teaspoon salt
3/4 teaspoon salt
1/4 teaspoon cayenne pepper or to taste (add less if you prefer less spicy)
Heat oil in a sauce pan. Saute onions and garlic.
Add rice and saute until rice starts to lightly brown.
Stir in chicken broth, tomato sauce and seasonings.
Cover and simmer for 20 minutes.
