This recipe uses simple ingredients and it's made by stuffing classic s'mores ingredients between two layers of cookie dough. So easy and these baked s'mores bars are amazing!

Their texture is somewhere between a brownie and a cookie - they are dense and chewy, but also crispy around the edges.

  • Graham Crackers - Give these cookie bars that quintessential s’mores flavor and crunch.
  • Marshmallow Fluff - Smooth and spreadable, this fluff will give your dessert a tasty and even layer of marshmallow goodness.
  • Semi-Sweet Chocolate Chips - Or milk chocolate chips for a more authentic campfire s’more flavor. You can also use chocolate chunks.
  • All-Purpose Flour - I used unbleached, all-purpose flour. Make sure to measure the flour by spooning it into a dry measuring cup and then leveling off the excess with the smooth edge of a butter knife.
  • Sugars - A blend of white granulated sugar and light brown sugar will perfectly sweeten these bars and keep them chewy.
  • Eggs - Gives this dessert some structure.
  • Butter - Adds a ton of rich flavor and just the right amount of moisture.
  • Leavening Agents - A blend of baking powder and baking soda helps these bars puff up in the oven.

How to Make S'mores Cookie Bars

Make The Chocolate Chip Cookie Dough

  1. In a large mixing bowl, cream together the butter, brown sugar, and white sugar until light and fluffy.
  2. Next add the eggs and continue mixing until combined.

  1. Mix in the baking powder, baking soda, and flour until no dry clumps remain.
  2. Use a spatula to fold the chocolate chips into your cookie bar dough.

  1. Press half of the dough into the bottom of a well-greased baking dish then top the dough with an even layer of marshmallow fluff.
  2. Layer the graham crackers on top of the fluff and then top the dish with the remaining cookie dough.
  3. Bake until the center of the dessert is set and the edges are a deep golden brown.
  4. Allow your s’mores cookie bars to cool completely before slicing and serving. Enjoy!

How to Store

These s'mores cookie bars are so delicious that I doubt they’ll stick around for long. However, if you do have leftovers, I recommend storing them in a Ziplock bag or Tupperware container.

If you need to stack your leftover bars on top of one another, be sure to place parchment paper between the layers to prevent them from sticking together.

These will stay fresh for up to 3 days on the counter or up to 5 days in the refrigerator. You can even freeze any sliced bars for up to 2 months in a freezer safe container.

These bars are delicious at room temperature, but you can also warm any leftover bars in the microwave for a super gooey treat.

Cookie Bar Baking Tips

  • It’s important to let these bars cool completely! The cooling time is for the marshmallow fluff more than the cookie portions of the bars. By cooling the bars before slicing and serving them, you will be able to get cleaner slices and the marshmallow fluff won’t stick to your knife or ooze out when slicing.
  • The quantity listed for graham crackers is in terms of full sheets of graham crackers.
  • These bars are very rich, but if you want an even richer bar you can use dark chocolate instead of semi-sweet chips.
  • These s’mores bars are great topped with a sprinkle of coarse sea salt. The saltiness pairs wonderfully with the sweetness of the marshmallow fluff and semi-sweet chocolate.

Marshmallow fluff is smooth and creamy like a spread, but bouncy and full of pure vanilla flavor like a marshmallow. I like stuffing these cookie bars with marshmallow fluff because it won’t melt or dissolve in the oven like marshmallows tend to do. The rich fluff still gives these s’mores bars plenty of gooey sweetness.

What chocolate is best for s’mores bars?

I like the depth of flavor that semi-sweet chocolate brings to these s’mores cookie bars; however, if you’re more of a traditionalist, you can make these bars with some milk chocolate chips! You could even chop up some Hershey’s chocolate bars for some extra meltiness. Alternatively, you could use dark chocolate chips, white chocolate chips, or peanut butter chips to put your own spin on this s’mores-inspired dessert.

S'mores Cookie Bars Recipe

Ingredients
  

  • 1 cup salted butter, softened
  • 1 cup light brown sugar
  • ½ cup white granulated sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 cups semi-sweet chocolate chips
  • 6 graham crackers
  • 7 ounce container of marshmallow fluff

Instructions
 

  • Preheat the oven to 350°F and grease a 9x13 inch baking dish with butter or nonstick cooking spray.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric hand mixer.
  • Once the butter and sugars are fully combined, add the eggs and mix again on a high speed until the eggs are well incorporated.
  • Maintaining a high speed on the hand mixer, add the baking powder, baking soda, and flour to the mixing bowl. Mix for about 1 ½ - 2 minutes, or the ingredients are fully combined.
  • Use a large spoon or spatula to gently fold in the chocolate chips, ensuring they are evenly distributed throughout the cookie dough.
  • Press half of the cookie dough into the bottom of the baking dish and top it with the marshmallow fluff. Use a spatula to spread the marshmallow fluff evenly to the edges of the pan
  • Layer the graham crackers evenly over the marshmallow fluff and top with the remaining cookie dough. Bake your bars for 20-25 minutes, or until a toothpick can be cleanly removed from the center of the pan.
  • Allow the bars to cool on the counter for an hour before slicing. Serve and enjoy!
