Ingredients

  • 1 cup ham cubed
  • 1 cup broccoli florets cut small
  • 1/8 cup red onion finely diced
  • 1/2 yellow pepper diced
  • 2 cups cheddar shredded
  • 1 teaspoon italian herb mix
  • salt and pepper to taste
  • 5 eggs beaten
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350 degrees and prepare a 6-cup muffin tin with cooking spray.

  2. In a mixing bowl, mix together the ham, broccoli, onion, and half of the cheese. Divide the contents into the muffin tins.

  3. In another bowl, mix together the eggs, milk, italian herbs, salt, and pepper. Carefully divide and pour the egg mixture into the muffin tin.

  4. Sprinkle the remaining cheese on top of the muffins and bake for approximately 20-25 minutes or until the cheese is melted on top and a toothpick comes out clean.

  5. Serve and enjoy!
