Ingredients

  • 1 lb ground beef
  • 1 ounce package taco seasoning
  • 1 cup chunky salsa
  • 1 cup water
  • 15 ounce can corn, drained
  • 15 ounce can black beans, rinsed and drained
  • 4 (6 inch) flour tortillas, sliced into 1-inch strips
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup sliced green onions

Instructions

  1. In a large skillet, brown the ground beef over medium heat 8 to 10 minuted until no longer pink and cooked through.

  2. Drain any excess grease then stir in the taco seasoning, water, salsa, corn and black beans.

  3. Cover and continue to cook over medium heat for 3 to 5 minutes until the sauce thickens.

  4. Add in the tortilla strips and stir. Then top with shredded cheese. Once the cheese melts, remove the skillet from heat. Top with sliced green onions.

  5. Serve immediately with your favorite toppings.
