Strawberry Shortcake Parfaits

Ingredients

2 1/4 cups all-purpose flour

1/4 cup + 2 tbsp. granulated sugar

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. kosher salt

1/2 cup (1 stick) salted butter, chilled

2 large eggs, beaten

3/4 cup sour cream

1/4 cup whole milk

4 1/2 cups quartered strawberries

1/4 cup granulated sugar

whipped cream, for assembly

Instructions

Line a large sheet pan with parchment paper and set aside.

Preheat oven to 400 F.

In a medium bowl, combine all-purpose flour, sugar, baking powder, baking soda, and salt and whisk.

Cube the butter and add to the bowl.

Cut butter into flour mixture using a pastry cutter or two knives until the mixture looks like large crumbs.

Add in eggs, sour cream, and milk and stir just until combined.

Spread dough onto the prepared pan and bake for 16-18 minutes.

Remove from pan and let cool completely.

While the cake is cooling, combine 4 cups of strawberries and 1/4 cup granulated sugar in a medium bowl.

Cut the cake into small cubes once cooled.

To assemble the parfaits, layer components in this order: cubed cake pieces, strawberry mixture, whipped cream, and top with additional sliced strawberries if desired.
