  • 3 cups cubed fresh & ripe mango
  • 3 cups all purpose flour
  • 2/3 cup coarse sugar
  • 1/2 cup brown sugar
  • 1/2 tsp orange extract
  • 1/2 tsp vanilla extract
  • 1 tsp salt
  • 2 large eggs
  • 1 tsp baking soda
  • 1 cup soft butter


  1. Preheat the oven to 360 degrees.

  2. In a mixing bowl add all ingredients and stir until combined.

  3. Grease the muffin tin and then scoop or spoon the batter into the muffin wells.

  4. Bake for 15 to 17 minutes, or until golden brown on top and a toothpick comes out clean when testing the center.

  5. Let cool for a few minutes before sharing with friends & family.
