  • 1 pie crust baked and cooled


  • 8 ounces cream cheese at room temperature
  • 3/4 teaspoon vanilla
  • 1/2 cup powdered sugar
  • 1 cup heavy whipping cream

Strawberry topping

  • 2 tablespoons cornstarch
  • 1/4 cup sugar
  • 2 tablespoons strawberry gelatin
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 3 cups strawberries washed and dried with tops cut off


  1. Using a mixer, beat the cream cheese until smooth. Add in vanilla and powdered sugar, continuing to beat until smooth and creamy.

  2. In a small bowl, beat heavy whipping cream until soft peaks begin to form. Fold into cream cheese mixture.

  3. Spread mixture into crust and place into refrigerator to cool for at least 1 hour.

  4. Once cooled, begin preparing the strawberry topping by whisking together the corn starch, sugar, gelatin, lemon juice, and water in a small sauce pan. Mix well over low heat, making sure to stir constantly until thickened. Remove from the heat and let cool for 15 minutes.

  5. Place the strawberries upside down into your pie on top of the cream cheese mixture. Pour the strawberry sauce over the strawberries.

  6. Refrigerate until ready to serve. Enjoy!
