Baked Pumpkin Donuts

These Baked Pumpkin Donuts are soft and moist and make the perfect breakfast or dessert. Topped with cinnamon-sugar they are great with a cup of coffee or a tall glass of milk.

  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup light brown sugar, packed
  • 1 1/2 cups pumpkin puree
  • 1 1/2 tsp pumpkin pie spice
  • 1 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1 3/4 cup plus 2 tbsp flour


  1. Preheat oven to 350 degrees and spray a doughnut pan with baking spray.

  2. Using a standing mixer, beat the vegetable oil, pumpkin puree, and sugar and add in eggs, one at a time, until well combined and smooth.

  3. In a medium bowl, combine the flour, pumpkin pie spice, salt, and baking powder until combined.

  4. Gradually mix in the dry ingredients into the wet.

  5. Pour batter into the donut pan about 3/4 way full.

  6. Bake in the oven for 15 to 18 minutes or until a toothpick inserted into the center of one comes out clean.

  7. Remove from oven and allow to cool for 5 minutes.

  8. Place 1 cup of sugar and 1 tsp cinnamon into a large Ziplock bag.

  9. Add a few doughnuts into the bag and shake until donuts are covered in sugar.

  10. Remove from bag and place onto a wire rack to cool.
