Preheat oven to 425.
Using a 4 inch star cookie cutter, cut out 6 stars from each pie crust.
Spoon about 2 tablespoons of filling onto half of the stars keeping the filling in the center.
Using water and your fingertips, wet the edges of the stars with the filling.
Carefully cover with the other half of the dough stars, pinching the edges together and crimping it shut with a fork.
In a small bowl, beat together the egg and one tablespoon of water.
Using a brush or your fingers, lightly coat the top of each pie with the egg mixture.
Sprinkle with sugar and bake on parchment-lined baking sheet for 12-15 minutes.
Allow the hand pies to cool for 10 minutes before serving.
