Cake Mix Peanut Butter Cookies

Peanut butter cookies are a classic treat, but sometimes you want something quick and easy. That's where these Cake Mix Peanut Butter Cookies come in.

They combine the rich flavor of peanut butter with the convenience of boxed cake mix for a simple yet delicious dessert.

Ingredients

• Peanut Butter • Butter • Eggs • Yellow Cake Mix • Granulated Sugar

Start by preheating your oven to 350°F. Line a cookie sheet with parchment paper or a silicone liner.

In a large mixing bowl, combine the peanut butter, softened butter, eggs, and vanilla (if using). Stir these ingredients together until they're well mixed.

Add the cake mix to the bowl about a quarter of the package at a time, stirring between each addition. If it gets too hard to stir, you can use your hands to mix in the last bit of cake mix.

Just make sure all the dry ingredients are fully incorporated with the wet ones. Pour some granulated sugar into a small bowl. This is for coating the cookies.

Use a cookie scoop or spoon to form balls of dough. I used a 2.5” cookie scoop. They should all be about the same size for even baking.
