Chocolate Thin Mint Ice Cream

With my easy no-churn Chocolate Thin Mint Ice Cream recipe, you can enjoy the minty and fudgy flavors of your favorite Girl Scout cookie all year long.

This thin mint ice cream features chunks of crispy thin mints in every bite of smooth and creamiest homemade chocolate ice cream base.


• Thin Mint Cookies • Heavy Whipping Cream • Sweetened Condensed Milk • Cocoa Powder • Vanilla Extract

In a large mixing bowl, whip the heavy cream until it reaches stiff peaks. Add the sweetened condensed milk, vanilla extract, and cocoa powder and continue mixing until combined.


Use a rubber spatula to gently fold the crushed, thin mint cookies into the chocolate ice cream base.


Transfer the no-churn thin mint ice cream to a loaf pan, cover with two layers of plastic wrap, and freeze until solid.


Allow the ice cream to thaw slightly before scooping, serving, and enjoying!


Not a huge fan of chocolate? You can make this thin mint ice cream with a vanilla base instead. Simply omit the cocoa powder and voila!
