Ingredients

  • 2 cups Old Fashioned Oats
  • 1/2 cup Sliced Almonds
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1 Large Egg
  • 2 tbsp Vegetable Oil
  • 1 cup Milk
  • 2 tbsp Pure Maple Syrup
  • 1 Ripe Banana
  • 1 cup Blueberries (fresh or frozen)

Instructions

  • Preheat the oven to 350 degrees and grease a muffin pan with nonstick cooking spray.
  • In a large bowl, combine the oats, almonds, baking powder, salt and cinnamon.
  • In a smaller bowl, combine the egg, milk, vegetable oil, maple syrup, and vanilla extract.
  • Add the wet ingredients to the dry ingredients, mix it all together, and add in the banana.
  • Gently stir in blueberries.
  • Pour mixture into muffin pans and bake for 23-25 minutes until golden brown.
  • Let cool before serving.
