Berry Baked Oatmeal Recipe

Ingredients

  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 eggs
  • ½ teaspoon vanilla extract
  • 2 cups milk
  • cups rolled oats
  • 2 Tablespoons melted butter
  • cups mixed berries (fresh or frozen)

Instructions

  • Preheat oven to 350ºF.
  • Whisk brown sugar, cinnamon, salt, eggs, and vanilla in a large bowl.
  • Stir in milk, then oats and butter.
  • Pour into a greased 9x9 or 8x11-inch pan.
  • Top with your choice of mixed berries and lightly press down into the oatmeal.
  • Bake in preheated oven for 30 minutes until the center is set.

Notes

You can use fresh or frozen berries. If using frozen, no need to thaw them first.
For storing leftovers, allow the baked oatmeal to cool completely. Cover it tightly with plastic wrap or transfer it to an airtight container. Refrigerate for up to 3 days.
