Chocolate Dipped Peanut Butter Cookies Recipe

These soft and chewy Chocolate dipped peanut butter cookies are sweet, salty, nutty, and easy to make. You only need one bowl to mix all of the cookie dough ingredients together!

Ingredients

  • 1 cup light brown sugar
  • ½ cup white granulated sugar
  • ½ cup salted butter, softened
  • 1 cup peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 3 cups all-purpose flour
  • cups semi-sweet chocolate chips

Instructions

  • Preheat your oven to375°F.
  • Use an electric hand mixer to cream the butter and sugars in a large mixing bowl for 5 minutes, or until smooth and creamy.
  • Whisk in the peanut butter until it is fully incorporated with the creamed sugar.
  • Add the eggs and vanilla to the mixing bowl. Whisk the ingredients together for 2 minutes. This gives the eggs time to become fully incorporated.
  • Slowly whisk in the baking powder, baking soda, and flour until the dry flour is incorporated into your cookie dough.
  • Drop balls of cookie dough about 2 tablespoons in size onto a baking sheet with about 1½ inches between each cookie. Use a fork to create a crisscross on each cookie and flatten them a little bit.
  • Bake your cookies for 12 minutes. Allow the cookies to cool for a few minutes while you melt the chocolate chips in the microwave. Start with 30 seconds and then stir the chocolate. Continue for 30 seconds at a time until the chocolate is fully melted.
  • Dip the top of each cookie in the melted chocolate and then return them to the baking sheet.
  • Serve and enjoy!

Notes

I don't recommend using natural peanut butter in this recipe. I would stick with using regular smooth peanut butter. Natural peanut butter tends to be more runny than regular peanut butter. This will cause the cookies to not hold together properly, become fragile, and have a grainy texture. 
Giving your cookies a few minutes to cool before dipping them in chocolate makes them more sturdy and easier to handle.
Store any leftover peanut butter cookies in an airtight container on the counter for up to 4 days.
