This Ham Salad recipe turns leftover ham into something special for sandwiches with fresh veggies and a creamy dressing for an easy lunch.

Ingredients

  • 3 cups diced ham
  • 2 celery stalks, finely diced
  • 3 Tablespoons finely diced red onion
  • ¾ cup mayonnaise
  • 3 Tablespoons sweet relish (or dill relish)
  • 1 Tablespoon Dijon mustard (or yellow mustard)
  • ½ teaspoon ground black pepper

Instructions

  • Add diced ham to a food processor and pulse until the ham becomes finely minced.
  • Mix the minced ham with remaining ingredients until well combined. Chill in the refrigerator until ready to serve.
  • Serve over buns, in wraps, or with crackers. Enjoy!

Notes

Great salad to make a day ahead.
For a lighter version, substitute the mayonnaise with nonfat Greek yogurt.
Store leftovers in an airtight container for up to 3-4 days in the refrigerator. Freezing is not recommended.
