- 3 Tablespoons Dijon mustard
- 2 Tablespoons honey
- 1 teaspoon apple cider vinegar
- 4 large flour tortillas (or whole wheat wraps)
- Green leaf lettuce
- 1 cup sliced red peppers
- 1 cup sliced cucumbers
- ½ cup diced red onion
- ¾ cup shredded cheese (cheddar, mozzarella)
