Instant Pot Pancake Bites Recipe

These delicious Instant Pot Pancake Bites are fluffy, moist, and bursting with flavor from the fresh fruit or toppings of your choice.

Ingredients

  • 1 cup Kodiak Pancake mix (or any other brand you prefer)
  • ¾ cup milk (or water)
  • ½ cup fresh fruit or topping of your choice (SEE NOTE) (Whole blueberries, chopped strawberries, mashed raspberries)
  • Cooking spray

Instructions

  • Combine pancake mix and milk (or water), and stir until well combined.
  • Spray the silicone mold with baking spray.
  • Fill the mold ¾ full (approximately 2 Tablespoons).
  • Top with your choice of toppings.
  • Place the trivet in the bottom of the instant pot.
  • Add 1 cup of water, then place the pancake mold on the trivet.
  • Secure the lid and turn valve to sealing.
  • Set manual to 7 minutes. The Instant Pot will come to temperature and cook for 7 minutes. When done, allow the pressure to release naturally for 5 minutes, and then quickly release the rest of the pressure.
  • Using oven mitts, remove mold and allow to cool for a few minutes.
  • Flip the pancake bites onto a plate.
  • Enjoy!

Notes

If you use raspberries, we like to add a little drizzle of honey over the top to cut the tartness of the raspberries.
Use whole or sliced blueberries, chopped strawberries, and mashed raspberries with a drizzle of maple syrup.
You can also use finely chopped nuts, mini chocolate chips, or even sprinkles.
