These Lucky Charms marshmallow treats are chewy, gooey marshmallow bars packed full of crunchy Lucky Charms pieces. They are super easy to whip up with just a few simple ingredients.
Line a 9x13 baking pan with parchment paper and spray with non-stick cooking spray. Set aside.
Melt butter in a large pot over medium heat.
Add the mini marshmallows and reduce the heat to low. Stir constantly until all the marshmallows are fully melted. Add the vanilla extract and mix well.
Remove the pot from the heat and pour in the cereal. Mix well until all the cereal is fully coated in marshmallows.
Dump the mixture into the prepared baking pan and press down evenly with a rubber spatula or your hands. Add a little non-stick cooking spray to your hands/rubber spatula to prevent sticking.
Place the baking pan in the refrigerator for approximately 15 minutes, or until the mixture is cool.
Remove from the refrigerator and lift the marshmallow treats out of the pan using the parchment paper. Cut into squares and serve.
