Ingredients

  • 4 Tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 10 ounce package mini marshmallows
  • 6 cups Lucky Charms mini cereal

Instructions

  • Line a 9x13 baking pan with parchment paper and spray with non-stick cooking spray. Set aside.
  • Melt butter in a large pot over medium heat.
  • Add the mini marshmallows and reduce the heat to low. Stir constantly until all the marshmallows are fully melted. Add the vanilla extract and mix well.
  • Remove the pot from the heat and pour in the cereal. Mix well until all the cereal is fully coated in marshmallows.
  • Dump the mixture into the prepared baking pan and press down evenly with a rubber spatula or your hands. Add a little non-stick cooking spray to your hands/rubber spatula to prevent sticking.
  • Place the baking pan in the refrigerator for approximately 15 minutes, or until the mixture is cool.
  • Remove from the refrigerator and lift the marshmallow treats out of the pan using the parchment paper. Cut into squares and serve.
