Meaty Breakfast Casserole

This Meaty Breakfast Casserole is made with sausage, bacon, ham, diced potatoes, spinach, cheese and eggs. It's the perfect hearty breakfast to start your day!

Ingredients

  • 1 package frozen diced potatoes with peppers and onions
  • 2 cups breakfast sausage, cooked and crumbled
  • 1 cup bacon, cooked and chopped
  • 1 cup ham, diced
  • 2 cups cheddar jack cheese, shredded
  • 1 cup baby spinach
  • 8 eggs
  • cups milk
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375 degrees.
  • Spread the diced potatoes in an even layer in the bottom of a 9x13 baking dish.
  • Over medium-high heat cook the bacon in a large skillet until crispy. Remove from pan and set aside. Drain grease.
  • Add sausage and cook until browned, crumbling into small pieces as it cooks. Drain any excess grease.
  • Sprinkle the sausage, bacon, diced ham, and spinach over the top of the potatoes.
  • Top with the shredded cheese and spinach.
  • Whisk together the eggs, milk, salt and pepper. Pour the mixture over the entire dish.
  • Bake uncovered for 50 to 60 minutes, until the eggs are set and cooked through.

Notes

Store leftovers covered tightly with plastic wrap or in an airtight container in the refrigerator for up to 2 days.
