Mexican Totchos Recipe

Crispy tater tots, gooey Colby jack cheese, and seasoned ground beef come together to make delicious Mexican Totchos.

Ingredients

  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • 2 pound bag tater tots, cooked
  • cups shredded Colby Jack cheese

Instructions

  • Set your oven to broil on high.
  • Combine the ground beef, garlic powder, cumin, salt, and red pepper flakes in a large pan over medium-high heat.
  • Use a spatula to break up the ground beef as it cooks. Cook for about 7 to 10 minutes until it is cooked through and no longer pink. Drain the excess grease from the pan.
  • Spread your tater tots on a 9x13-inch baking sheet and top them with the ground beef and cheese. Cook your Totchos for 5 minutes or until the cheese is completely melted.
  • Serve immediately with your favorite toppings, and enjoy!

Notes

Leftover Totchos can be stored in an airtight container in the fridge for up to 3 days.
In addition to garlic powder and cumin, you can also season your ground beef with taco seasoning to get the ultimate flavor.
