Peach Coffee Cake Recipe

This easy Peach Coffee Cake is bursting with fresh, juicy peaches and topped with a sweet, crumbly streusel that is simply irresistible.

Ingredients

Streusel Ingredients

  • cup all-purpose flour
  • cup brown sugar
  • ½ teaspoon cinnamon
  • 2 Tablespoons butter, softened

Cake Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • cup granulated sugar
  • cup brown sugar
  • ½ cup vegetable oil (avocado oil or canola oil will also work)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cups peaches, pitted, and diced

Glaze Ingredients

  • ¾ cup powdered sugar
  • 1 Tablespoon milk

Instructions

  • Preheat the oven to 350°F. Lightly grease or line a 9x9-inch baking pan with parchment paper.
  • In a medium bowl, whisk the flour, baking powder, and salt until combined.
  • In a large mixing bowl, whisk the granulated sugar, brown sugar, and oil together. Then add the egg and vanilla, and whisk until combined.
  • Add the flour ingredients to the wet ingredients and mix just until combined. Don't overmix. The batter will be thick.
  • Gently fold in the peaches.
  • Spread the batter into the prepared baking pan.
  • In a small bowl, combine the streusel ingredients until crumbly. Sprinkle streusel over the batter in the baking pan.
  • Bake in a preheated oven for 25 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow to cool.
  • Whisk the glaze ingredients together and drizzle over the cake once cooled.

Notes

You can use frozen peaches, but thaw them completely and pat them dry with paper towels to remove excess moisture before dicing. 
Let the cake cool for at least 15 minutes before adding the glaze.
Store any leftover cake in an airtight container at room temperature for up to 3 days.
