- ½ cup butter
- 1 cup chocolate chips (divided)
- 3 eggs
- ¾ cup brown sugar
- ½ teaspoon vanilla extract
- ¼ cup cocoa
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ½ teaspoon espresso powder (optional - intensifies chocolate flavor)
Preheat oven to 350º F.
Melt butter and ½ cup chocolate chips together, either over a double boiler or in 15-second intervals in the microwave.
Whisk eggs and brown sugar together in a large mixing bowl until it lightens in color.
Whisk in vanilla and melted butter-chocolate mixture.
Stir in the cocoa, flour, salt, and espresso powder. Then, stir in the remaining chocolate chips.
Pour into a greased 8-inch skillet.
Sprinkle with additional chocolate chips if desired.
Bake in the center of the oven for 25 minutes.
Remove from oven and let cool.
Serve with vanilla ice cream or whipped topping.
Once Brownies cool to room temperature, transfer individual slices to an airtight container and store them for up to 2 days or store them in the refrigerator for up to 4 days.
Use an 8-inch skillet as recommended. Using a different size may affect the baking time and result in an unevenly cooked brownie.
