Apple Cinnamon Oatmeal Muffins

These Apple Cinnamon Oatmeal Muffins make a delicious breakfast or snack. Made with old fashioned oats, cinnamon and apples for the perfect flavor combination.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 cup firmly packed light brown sugar
  • 1 cup milk
  • 1 large egg, lightly beaten
  • 1/2 cup unsalted butter, melted and cooled
  • 2 apples, chopped
  • 1/4 tsp cinnamon

Instructions

  • Preheat oven to 400 degrees.
  • Mix dry ingredients until well combined. Add in sugar and wet ingredients, stirring to incorporate.
  • Fold in 1 chopped apple.
  • Spray a muffin tin with nonstick cooking spray and divide batter between muffin cups. Top with the other chopped apple and cinnamon.
  • Bake for 20 minutes or until a toothpick inserted in the muffins comes out clean.
