Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • ¼ cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups peeled, shredded apples (about 4 medium apples)
  • cups chopped walnuts, divided

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and grease a 9x5 loaf pan.
  • In a large bowl whisk together the flour, baking powder, and salt.
  • In a separate bowl beat the butter with an electric mixer until creamy for about 30
    seconds. Add the sugar and mix until combined.
  • Then mix in the eggs, buttermilk, and vanilla extract.
  • Slowly add the dry ingredients to the wet until everything is combined.
  • Fold in the shredded apples and 1 cup chopped walnuts.
  • Pour the batter into the prepared loaf pan and spread evenly.
  • Top the bread off with ¼ cup walnuts.
  • Bake for 50 minutes or until a toothpick comes out clean.
  • Transfer the pan to a baking rack and let it cool for 1 hour before serving.

Notes

The batter for the apple walnut bread will be thick.
You can store the apple walnut bread in an air-tight container at room temperature for up to 4 days.
