Preheat oven to 350 degrees. Spray a muffin tin with non-stick cooking spray.
Combine the ground beef, bread crumbs, ¼ cup ketchup, dill pickles, onions, mustard, pepper, seasoning salt, and egg in a large bowl. Use your hands to mix the ingredients until they’re well combined.
Press the meat mixture into each cup of a six-cup muffin pan, filling each cup halfway full.
Make a small indention into the meat with your thumb and press one tablespoon of shredded cheese into the meat mixture.
Top the cheese with remaining meat mixture, pressing the edges down to seal the meat around the cheese.
Bake in the preheated oven for 25 minutes, then remove the pan and top with remaining ketchup and chopped bacon. Return to oven for 10 more minutes, until meat is cooked through.
