Bacon Cheeseburger Meatloaf Muffins

These Bacon Cheeseburger Meatloaf Muffins are easy to make and have all the classic flavors of a cheeseburger which makes it a family friendly recipe.

To get the All-American Cheeseburger taste this is made with ground beef, cheddar cheese, onions, pickles, ketchup and mustard. Then topped with ketchup and chopped bacon.

This meatloaf is comfort food at it's best and a hearty dinner idea that is delicious served with, green beans, Cheesy Potatoes Casserole or Cajun Corn On The Cob!

Helpful Recipe Tips

It's best to use ground beef that is 90% lean ground beef and 10% fat. It will shrink less while cooking and it will give the meat enough moisture to keep it from drying out and it won't be sitting in extra grease while cooking.

I'm sure adding dill pickles to meatloaf sounds strange but trust me and don't leave them out. Unless you hate pickles of course. But if you like them, the pickles add some crunch and saltiness that really makes it taste like a cheeseburger. 

I recommend freshly grating your own cheese as it melts more smoothly than pre-shredded cheese.

To prep ahead you can make the meat mixture earlier in the day and store in the refrigerated until ready to use.

  • lean ground beef
  • bread crumbs
  • ketchup
  • diced dill pickles
  • chopped onion
  • yellow mustard
  • black pepper
  • seasoning salt (Lawry’s)
  • egg
  • shredded cheddar cheese
  • cooked and chopped bacon

How To Make Bacon Cheeseburger Meatloaf Muffins

Preheat oven to 350 degrees. Spray a muffin tin with non-stick cooking spray.

Combine the ground beef, bread crumbs, ¼ cup ketchup, dill pickles, onions, mustard, pepper, seasoning salt, and egg in a large bowl. Use your hands to mix the ingredients until they’re well combined.

Press the meat mixture into each cup of a six-cup muffin pan, filling each cup halfway full.

Make a small indention into the meat with your thumb and press one tablespoon of shredded cheese into the meat mixture.

Top the cheese with remaining meat mixture, pressing the edges down to seal the meat around the cheese.

Bake in the preheated oven for 25 minutes, then remove the pan and top with remaining ketchup and chopped bacon. Return to oven for 10 more minutes, until meat is cooked through. (Cook ground beef to a safe minimum internal temperature of 160 °F, measured with a food thermometer.)

How To Store

Store leftover meatloaf in airtight container in the refrigerator for up to 3 days. Follow the safety and food storage guidelines of the USDA when handling ground beef.

  • 1 pound ground beef
  • ½ cup bread crumbs
  • ¼ cup ketchup, plus 2 tablespoons for topping
  • ¼ cup dill pickles, chopped
  • ¼ cup onion, chopped
  • 2 Tablespoons yellow mustard
  • 1 teaspoon black pepper
  • 2 teaspoons seasoning salt (Lawry’s)
  • 1 egg
  • 6 Tablespoons shredded cheddar cheese
  • 6 slices of bacon, cooked and chopped

Instructions
