These are made in a 10x15 pan making them a perfect dessert to feed a crowd! My friend calls these the best ever pecan pie bars and they are so good that they quickly disappear.
My family loves dessert bars because they are easy to serve and easy to take in lunches and to events or social gatherings. Recipe Baking Tips
Always soften the butter to room temperature before using it to make it easier to cream with your other ingredients.
When measuring flour be sure and spoon it into a dry measuring cup first and level off the excess with smooth edge of butter knife to get accurate measurements.
You can purchase chopped pecans but I always purchase pecan halves because I can get a good deal on them at Costco and chop them myself with my Pampered Chef food chopper. It works great.

How To Make These Easy Pecan Pie Bars
Preheat oven to 350 degrees. Spray a 10x15 bar pan with nonstick cooking spray.
To make the bottom crust add flour, sugar, salt and cold butter to food processor. Pulse until blended and the flour resembles coarse sand. If you don't have a food processor you can use a handheld electric mixer or a stand mixer fitted with paddle attachment to mix the crust ingredients.

Press the crust mixture evenly in the bottom of the bar pan and bake for 20 minutes until edges are light golden brown.

While crust is baking make the filling. In a large bowl whisk together the eggs, corn syrup, sugar, melted butter, and vanilla. Gently fold in pecans.

When the crust is done baking, pour the pecan mixture over the hot crust.

Return the pecan pie bars to the oven and bake for 25 to 30 minutes until the filling is set.
Remove from the oven and allow to cool completely before cutting into bars.

How To Store
Store in an airtight container between layers of parchment paper in the refrigerator for up to 3 days. Always follow the storage recommendations of the USDA.

If you need a good 10x15 baking pan I just purchased this OXO Good Grips Non-Stick Pro Jelly Roll pan to use for sheet cakes and dessert bars.
When baking a lot it's great to have a sturdy stand mixer, if it's in the budget. I have this KitchenAid Classic Series Stand Mixer in white and love it. I've had it for over 10 years and highly recommend it. I also have this Cuisinart 9-Speed Handheld Mixer with Storage Case in white. I like being able to store everything together in my cabinet..
