I remember eating at Shoney’s with my parents on Sunday nights after church. This recipe really brings back some great memories of time spent with family and friends.

This strawberry pie was probably the most popular item on Shoney’s menu. And it’s perfect to make in the summer when you can get fresh strawberries.

Wash the strawberries and remove the stems and hulls. Halve then thinly slice strawberries and set aside to dry.

In a sauce pan, add the water, sugar, cornstarch, and strawberry gelatin. Stir to combine.

Cook the mixture over medium-high heat, stirring constantly, until the mixture begins to simmer.

Remove then pan from the heat and allow to cool slightly. As it cools, stir the mixture occasional to prevent it from clumping. Continue cooling until the gelatin has thickened slightly but is still pourable.

Add the sliced strawberries to the pie crust and then pour strawberry gelatin over the strawberries.

Chill the pie in the refrigerator for at least 3 hours before slicing and serving.

I like to serve each slice with a dollop of whipped cream.

How To Store: Cover and store leftover pie in the refrigerator for 2 days.

Recipe Tips

This recipe uses a store bought pie crust to save time but you can make your own pie crust if you prefer.

To save time you can wash and hull the berries the day before and store in air tight container in the refrigerator.

You can leave the strawberries whole instead of slicing them. I prefer to slice them to make it easier to serve.
