Easy Cheesecake Pudding Dessert With Strawberries

I could eat this treat year round but I really love it in the summer. Fresh strawberries combined with the crunch of the vanilla wafers and creaminess of the cheesecake pudding and cool whip is a refreshing summer dessert.

Other favorite summer desserts are these Banana Split Pudding Cups and Strawberry Shortcake Parfaits.

I like serving this easy cool whip pudding dessert (what my friend calls it) in individual mason glass jars. You can use pint size jars or mini size jars if you have more people to serve.

These self-serve desserts are perfect for parties, fourth of July, Memorial Day or baby showers and bridal showers. Everyone can grab their own dessert jar and enjoy!

Variations and Substitutions

You can also easily make changes to this dessert. That's what I love about it. It's so versatile that you can use ingredients you already have on hand.

  • If you don't have strawberries substitute with other berries such as blueberries or raspberries. You can or also use other fruits such as peaches or pineapples for a tropical version.
  • No cheesecake pudding in your pantry? Try other pudding flavors like vanilla or lemon pudding.
  • If you don't have vanilla wafers you can use graham crackers or a pretzel crust instead.

Ingredients

  • strawberries, hulled and chopped
  • cheesecake instant pudding mix
  • milk
  • sugar
  • cool whip
  • vanilla wafers

How To Make Strawberry Cheesecake Pudding Dessert

Clean and dice the strawberries. Pour the sugar over the strawberries and stir to coat. Set aside.

In a large bowl add both the cheesecake pudding packages together and the milk and mix together on low speed until mixture thickens. Place in the refrigerator to chill for 5 to 10 minutes or until set.

Place a vanilla wafer in the bottom of a pint-size glass jar and top with a layer of cheesecake pudding, followed by another vanilla wafer.

Next add a layer of strawberries and another vanilla wafer.

Then add a layer of cool whip, a layer of strawberries, and another vanilla wafer.

And final layer add cheesecake pudding, another vanilla wafer, and then cool whip.

Top with a whole strawberry and a vanilla wafer.

Cover with plastic wrap and store in the refrigerator until ready to eat.
