Strawberries and Cream Scones With Cream Cheese Glaze

One of my favorite ways to start the morning on the weekends is with these homemade scones that are so good warm from the oven drizzled with cream cheese glaze. They are crunchy but soft and perfect!

They are the perfect sweet breakfast or brunch in the summer made with fresh strawberries.

Baking Tips For Making Scones

Accurate Measurements. When baking it's important to spoon and level your flour. Spoon your flour into a dry measuring cup and level off the excess with smooth edge of butter knife.

Keep Butter Cold. In this recipe for scones you need to keep your butter very cold. Use it right out of the refrigerator to get tender flaky scones.

Don't Overmix. Don't overwork the dough to avoid tough and chewy scones.

Chill The Dough. You don't want the butter to melt into the dough before it goes in the oven so chill the dough in the refrigerator again before baking it.

Make Ahead. To save time you can make these the night before and put them in the refrigerator until you are ready to bake.

INGREDIENT LIST

  • all-purpose flour
  • granulated sugar
  • baking powder
  • unsalted butter
  • heavy cream
  • strawberries, cut into pieces
  • salt

Cream Cheese Glaze Ingredients

  • cream cheese
  • powdered sugar
  • vanilla
  • milk
  • salt

How To Make Scones

Preheat oven to 375 degrees. Line a baking sheet with parchment paper for easier clean up or you can use a seasoned baking stone.

Dry Ingredients. In your food processor or large bowl, blend together flour, sugar, baking powder, and salt.

Then add in cold butter and pulse until the butter is incorporated and the flour is the texture of sand and sticks together when pressed.

If not using a food processor then use a pastry cutter to work in the butter.

Wet Ingredients. In food processor pour 1/2 cup heavy whipping cream and pulse to combine the dough. If the dough becomes too thick, remove the blade and use a wooden spoon.

If not using food processor pour 1/2 cup heavy whipping cream into bowl with dry ingredients and butter and stir to combine.

Next gently fold in the strawberries.

Chill dough in the refrigerator for 10 minutes.  A cold dough will prevent your scones from spreading.

Once dough is chilled turn batter out onto a lightly floured surface and gently bring the soft dough together. Pat into a circle about 1 to 1 ½ inch thick.

Don't overwork the dough. Using a sharp knife, cut the circle into 8 wedges.

Place wedges on a prepared baking sheet.

Bake for approximately 15 minutes or until scones are crispy on the outside and soft in the middle.

How To Make The Cream Cheese Glaze

Mix together the cream cheese, powdered sugar, vanilla, and salt. Whisk in the milk until smooth. Spoon over scones.

Let the scones cool for a few minutes. Then use a spoon to drizzle the cream cheese glaze over the strawberry scones.

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 stick unsalted butter, very cold
  • ½ cup heavy cream, plus 1 Tablespoon
  • 1 cup strawberries, cut into pieces

Cream Cheese Glaze Ingredients

  • 4 ounces cream cheese, room temperature
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ¼ cup milk
  • pinch of salt
