Pizza Stuffed Zucchini Boats With Ground Beef and Pepperoni

If you have an abundance of Zucchini in your garden this year try this delicious recipe that is family friendly with all the flavors of pizza to make everyone happy.

Zucchini has a mild taste that is perfect for stuffing with your favorite pizza toppings.

These delicious Pizza Zucchini Boats are also low carb (use a marinara sauce that is sugar free) and keto friendly.

Recipe Variations

Here are a few ideas for different variations of Pizza Stuffed Zucchini Boats. Make it using your favorite pizza ingredients. It's so versatile!

  • Hawaiian Pizza - Fill with marinara sauce, ham, pineapple, and cheese.
  • Vegetarian Pizza - Add all your favorite vegetables such as mushrooms, bell peppers, black olives and tomatoes and marinara sauce.
  • Sausage Pizza - Make with pork or turkey sausage, marinara sauce, and mozzarella.
  • BBQ Chicken Pizza -  Barbecue sauce, diced chicken, bacon, sweet red onions and cheddar.

Recipe Substitutions

  • You can swap turkey pepperoni in place of the regular pepperoni. 
  • Use ground turkey instead of the ground beef if you prefer.
  • You can use your favorite cheese such as Cheddar, Provolone Cheese, Monterey jack or Pepper Jack Cheese in place of Mozzarella or use a combination.

  • zucchinis, cut into quarters
  • olive oil
  • garlic powder
  • black pepper
  • lean ground beef
  • small onion, diced
  • marinara sauce
  • shredded mozzarella cheese
  • pepperoni slices

Recipe Tip: Choose zucchini that are similar in size so they will bake in the same amount of time. This prevents having some that are overcooked and others that are undercooked.

How To Make Pizza Stuffed Zucchini Boats

Preheat the oven to 350 degrees and line a baking sheet with parchment paper or foil.

Start by cutting off the ends of the zucchini and then slice lengthwise in half. And then cut in half so you get 4 zucchini boats from each zucchini. 

Use a small spoon to gently scoop out the center of each zucchini creating a well for the toppings.

Lightly brush the zucchini with olive oil and season with garlic powder and black pepper. Place the zucchini boats in the oven and cook for 10 minutes.

While the zucchini is in the oven get your other ingredients ready.

In a skillet add the ground beef and cook over medium heat until browned and crumbled. Add in the chopped onion as soon as the meat begins to brown. Once done drain any fat and add in the marinara sauce and reduce heat to low. Let simmer until zucchini is done.

When the zucchini is done remove from the oven and fill the center of each one with ground beef and marinara sauce. Top with shredded cheese and pepperoni.

Place the zucchini back in the oven and bake for 30 minutes, until the zucchini is tender and cheese is melted.

Serve while warm and enjoy! So good!

Storage Tips

You can store leftovers in an airtight container in the refrigerator for up to 3 days. I don't recommend freezing. These do not freeze well as the zucchini will become mushy.
