Making this cheesy potatoes casserole recipe with frozen diced potatoes is a time saver on busy weekdays because you don't have to peel or dice any potatoes.
If you want to make this a one-pot meal you can add rotisserie chicken or diced ham and serve with crusty bread and a side salad. So easy!

Recipe Tips
This recipe uses a bag of frozen diced hash browns but you can dice your own potatoes and boil them until tender before adding to the casserole.
If you can't find the regular frozen diced hash browns you can use the Potatoes O'Brien with Frozen Onions and Peppers or the Shredded Hash Brown Frozen Potatoes.
I recommend freshly grating your own cheese as it melts more smoothly than pre-shredded cheese.

This cheesy potatoes casserole is made with simple ingredients which makes it a budget friendly recipe.

- frozen diced potatoes - I like Ore-Ida Diced Hash Brown Frozen Potatoes but you can use whatever brand you prefer.
- sharp cheddar cheese - Try shredding a block of cheese instead of buying packaged shredded cheese. It melts more smoothly.
- sour cream - I used full fat sour cream. But you can use reduced fat sour cream instead.
- milk - You can use full fat or 2% milk.
- butter
- paprika
- salt and pepper
- cornstarch
How To Make Cheesy Potatoes Casserole
Preheat oven to 350 degrees and prepare a 9x13 baking dish by spraying with nonstick cooking spray. Set the pan aside.
Whisk together the milk and cornstarch in a small sauce pan. Add the butter, salt, pepper, and paprika. Heat over medium-low heat until it comes to a boil, whisking frequently.
Once it reaches a boil reduce the heat and allow to simmer for one minute. Remove from heat and stir in one cup of cheddar cheese.
In a large bowl add the frozen diced potatoes. Pour the cheese mixture over the potatoes and stir to mix.
Next add in the sour cream and stir to combine all ingredients. Pour the potato mixture in the prepared baking dish.
Bake uncovered for 35 minutes. When 10 minutes is left on the bake time, remove casserole from oven and sprinkle remaining cheese over the top. Return to oven and continue baking for remaining 10 minutes.
Store covered in the refrigerator for up to 3 days.
