How Do You Cook Zucchini And Squash So It's Not Mushy?

To keep if from getting mushy you need to slice the zucchini and squash a little thicker than if you were sauteing in a pan and make sure to spread the slices out on the baking sheet in a single layer.

I recommend using small to medium size zucchini and squash and slicing them into quarter-inch slices and then half each slice.

Don't overcrowd the pan and make sure you don't over cook it.

Start with the minimum cooking time and check it with a fork to see if it's tender. Keep an eye on it so it doesn't overcook.

STEP 2: Rinse and pat dry. Then trim off the edges of the zucchini and squash. Slice them into quarter-inch slices, then half each slice.

STEP 3: In a medium bowl add the zucchini and squash slices. In a small bowl mix the garlic powder, pepper, and salt. Drizzle the zucchini and squash with olive oil then add seasonings while gently tossing to coat each piece.

STEP 4: Arrange the zucchini and squash slices in a single layer on the lined baking sheet. Bake for 10 to 15 minutes, until the squash is fork tender. Serve immediately.
