These Chocolate Waffles have become a weekend favorite in our house. We usually top them with fresh berries and a dollop of whipped cream, but there are so many ways to serve them.
Sometimes we drizzle them with extra chocolate syrup for an indulgent treat, and on days when we want something a little lighter, we'll just dust them with a bit of powdered sugar.

How To Make Chocolate Waffles
Begin by preheating your waffle maker to make sure it's hot and ready when your batter is mixed.


While the waffle maker is heating up, grab a large bowl and a spoon. Stir together the flour, sugar, cocoa powder, baking powder, and salt. Be sure to break up any cocoa powder lumps for a smooth batter.



Next, in a separate bowl, whisk the milk, eggs, and melted butter until they're well combined. The butter might try to separate, but keep whisking until it's all incorporated.
Now, pour the wet ingredients into the center of the dry ingredients. Stir everything just until mixed. Don't worry if there are a few small lumps - overmixing can make your waffles tough. Then, gently fold in the mini chocolate chips.

Close the lid and let it cook. Most waffle makers take about 3 minutes, but again, this can vary. You'll know it's done when steam stops coming out of the sides of the waffle maker. When it's ready, carefully remove the waffle and repeat with the remaining batter.

Remember, the cooking time might differ based on your specific waffle maker. If your first waffle isn't quite right, don't get discouraged. Just adjust the cooking time for the next one.
And don't worry if you have leftovers - these waffles freeze beautifully. Just pop them in the toaster or microwave for a quick chocolate breakfast any day of the week!
Now comes the fun part - toppings! Add a dollop of whipped cream, scatter some fresh strawberries, drizzle with chocolate syrup or sprinkle on some extra mini chocolate chips. Or, if you're feeling indulgent, go for all of the above!

Can I use Dutch-process cocoa instead of regular cocoa powder?
Yes, you can use Dutch-process cocoa. It will give your waffles a deeper color and slightly different flavor. If you do, reduce the baking powder to 2 teaspoons and add 1/2 teaspoon of baking soda to balance the pH.
Can I use a different type of flour, like whole wheat?
You can substitute up to half of the all-purpose flour with whole wheat flour. Keep in mind this might make the waffles slightly denser.
My waffles aren't crispy. What am I doing wrong?

Storing and Freezing
Store: Let cooled waffles come to room temperature, then store in an airtight container. They'll keep in the fridge for 2-3 days. For best results, reheat in a toaster or toaster oven until crisp.
Freeze: These waffles freeze beautifully! Let them cool completely, then place in a single layer on a baking sheet and freeze until solid (about 2 hours). Transfer to a freezer bag or container. They'll keep for up to 3 months.
Reheat: For frozen waffles, pop them directly in the toaster or toaster oven - no need to thaw first. Heat until they're warm and crispy, usually 1-2 cycles in the toaster. You can also microwave them for about 30 seconds, but they won't be as crisp. If you're reheating for a crowd, you can warm them in a 300°F oven for about 5-10 minutes.
Recipe Tips
- If your batter seems too thick, add a tablespoon of milk at a time until it reaches a pourable consistency. If it's too thin, add a tablespoon of flour at a time.
- For extra fluffy waffles, separate the eggs. Mix the yolks with the wet ingredients, then fold in stiffly beaten egg whites at the end.
- To keep your waffles warm and crispy while making the full batch, place them directly on the rack in a 200°F oven.
