Blueberry Delight is a cool and creamy dessert that's perfect for hot summer days. This layered dessert brings together the best parts of cheesecake and blueberry pie, all on top of a tasty graham cracker crust.

It's super easy to make ahead of time, which is great for cookouts or when you need to bring a dessert to a cookout. The layers of creamy cheesecake, sweet blueberries, and fluffy whipped topping are a combo that everyone will love.

What I love about this Blueberry Delight dessert is how simple it is to put together. The only baking involved is a quick trip to the oven for the crust, and then it's all about layering and chilling. It's my go-to dessert when I'm hosting a barbecue or need to bring something to a potluck.

One of the great things about this recipe is how easily you can customize it. Sometimes I'll swap out the blueberry filling for strawberry or cherry if that's what I have on hand. And while I love the crunch that pecans add, you could easily use walnuts or even leave them off entirely if you're dealing with nut allergies.

I like to make this dessert the night before I need it. Not only does this save time on the day of an event, but I find the flavors come together perfectly after a night in the fridge. Plus, it's so refreshing to have a cool, creamy dessert ready to go on a hot summer day.

  • Graham crackers: These form the base of our crust. You can buy them pre-crushed, but I prefer to crush my own for a fresher taste.
  • Unsalted butter: This binds the crust together. Make sure it's fully melted for easy mixing.
  • Cream cheese: The star of our cheesecake layer. Be sure to let it soften to room temperature for smooth mixing.
  • Confectioners sugar: This powdered sugar sweetens our cheesecake layer without making it grainy.
  • Vanilla extract: A little goes a long way in enhancing the flavor of the cheesecake layer.
  • Whipped topping: This makes our dessert extra light and fluffy. You'll use it in the cheesecake layer and as a topping.
  • Blueberry pie filling: The fruity layer that gives this dessert its name. You can use homemade if you prefer, but canned works great for convenience.
  • Pecans: These add a nice crunch on top. Feel free to toast them lightly for extra flavor.

How To Make Blueberry Delight

Start by preheating your oven to 350°F and lightly greasing a 9x13 baking dish.

If you're crushing your own graham crackers, now's the time to do it. A food processor works great, but you can also put them in a Ziploc bag and crush them with a rolling pin.

Mix the graham cracker crumbs with the melted butter in a medium bowl until they're well combined. Press this mixture into your prepared baking dish, making sure it's even. Pop it in the oven for just 7 minutes to set the crust.

While the crust is cooling, you can work on the cheesecake layer. Beat the softened cream cheese with the powdered sugar and vanilla until it's smooth. Then gently fold in half of the whipped topping. This keeps the mixture light and fluffy. Once your crust has cooled completely, spread the cheesecake mixture over it evenly.

Next, pour the blueberry pie filling over the cheesecake layer and spread it out.

Top everything off with the remaining whipped topping, spreading it to the edges. Sprinkle the chopped pecans over the top for that final touch of crunch.

Now comes the hard part - waiting! Pop the dish in the fridge for at least an hour, though overnight is even better. When you're ready to serve, just slice and enjoy!

Can I use fresh blueberries instead of pie filling?

While you can use fresh blueberries, you might want to cook them down into a compote first. Otherwise, the dessert might be too watery.

Make-Ahead, Storing and Freezing

Make Ahead: This dessert is perfect for making ahead. You can prepare it a day or even two before you need it. In fact, I think it tastes even better after the flavors have had time to meld in the fridge overnight.

Store: You can keep your Blueberry Cheesecake Lush in the fridge for up to 3 days. Just make sure it's in an airtight container to keep it fresh. The crust might soften a bit over time, but it'll still taste great.

Freeze: If you have leftovers (which doesn't happen often in my house!), you can freeze them for 2-4 weeks. Just make sure to use a freezer-safe, airtight container. When you're ready to enjoy it again, let it thaw in the fridge overnight.

Substitutions and Variations

  • Switch up the fruit. Try using strawberry, cherry, or peach pie filling instead of blueberry.
  • Change the crust. Use vanilla wafers or Oreo cookies instead of graham crackers.
  • Add some zest. Mix lemon zest into the cheesecake layer for a bright, fresh flavor.
  • Change the nuts. Swap the pecans for walnuts, almonds, or your favorite chopped nuts.

Recipe Tips

  • Make sure your cream cheese is fully softened before mixing for the smoothest cheesecake layer.
  • If you're short on time, you can skip baking the crust. It'll be a bit more crumbly, but still tasty.
  • For a prettier look, reserve some of the pecans and sprinkle them on just before serving. This keeps them nice and crunchy.
  • To get clean slices, dip your knife in hot water and wipe it dry between cuts.
  • Let the dessert sit at room temperature for about 10 minutes before serving to soften it slightly.

Ingredients
  

  • 2 cups graham crackers, crushed
  • ½ cup unsalted butter, melted
  • 1 8-ounce block cream cheese, softened to room temperature
  • ½ cup confectioners sugar
  • 1 teaspoon vanilla extract
  • 16 ounces whipped topping, divided
  • 2 21-ounces cans blueberry pie filling
  • cup chopped pecans

Instructions
 

  • Preheat oven to 350℉ and grease a 9x13 baking dish.
  • Crush graham crackers in a food processor or crush them in a plastic Ziploc bag with a rolling pin.
  • In a large mixing bowl, combine the graham crackers and melted butter until well combined.
  • Spread and press down the crust mixture into a 9x13 baking dish with your hands or the back of a spatula. Place in the oven and bake for 7 minutes.
  • Allow the crust to fully cool once finished baking.
  • In a large mixing bowl, beat the softened cream cheese, powdered sugar and vanilla extract until smooth. Fold in half of the whipped topping until fully incorporated.
  • Spread the cream cheese mixture evenly across the top of the cooled graham cracker crust.
  • Pour the blueberry pie filling across the top of the cream cheese layer and spread evenly.
  • Next, spread the remaining whipped topping over the top of the pie filling layer.
  • Garnish the whipped topping layer with chopped pecans.
  • Chill in the refrigerator for at least 1-2 hours, or overnight, before serving. Slice, serve, and enjoy!
