Ingredients

  • 1 frozen pie crust
  • 1 pint fresh strawberries, thinly sliced
  • 1 cup water
  • 1 cup sugar
  • 3 Tablespoons cornstarch
  • 3 ounces strawberry gelatin

Instructions

  • Bake the frozen pie crust according to the package directions. Then set aside and allow to cool to room temperature.
  • Wash the strawberries and remove the stems and hulls. Halve then thinly slice strawberries and set aside to dry.
  • In a sauce pan, add the water, sugar, cornstarch, and strawberry gelatin. Stir to combine.
  • Cook the mixture over medium-high heat, stirring constantly, until the mixture begins to simmer.
  • Remove then pan from the heat and allow to cool slightly. As it cools, stir the mixture occasional to prevent it from clumping. Continue cooling until the gelatin has thickened slightly but is still pourable.
  • Add the sliced strawberries to the pie crust and then pour strawberry gelatin over the strawberries.
  • Chill the pie in the refrigerator for at least 3 hours before slicing and serving.
