Baked Lemon Blueberry Donuts

Easy Baked Lemon Blueberry Donuts combine lemon and blueberries for the perfect flavor combination topped with a delicious lemon glaze!

Ingredients

  • 1 cup frozen or fresh blueberries
  • 1 Tablespoon lemon zest
  • 2 teaspoons fresh lemon juice
  • 4 Tablespoons unsalted butter, melted
  • ¼ cup vegetable oil
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup milk
  • 2⅔ cup self rising flour

Instructions

  • Preheat oven to 425 degrees. Spray your donut pans with non-stick spray or grease with butter.
  • Add the sugar, vegetable oil and melted butter to a large bowl and mix until well combined.
  • Next add in the eggs, vanilla, milk, lemon juice and lemon zest and mix until blended.
  • Then add in the flour and stir until combined.
  • Coat the blueberries in a spoonful of flour to prevent them from sinking to the bottom then carefully fold in the blueberries.
  • Using either a piping bag or large spoon, pipe or spoon the batter into the prepared donut pan, filling 3/4 of the way full.
  • Bake for 8-10 minutes, until the tops are a light golden brown and a toothpick inserted into the donut comes out clean.
  • Remove from the oven and allow to cool in pan for about 10 minutes.
  • While donuts are cooling prepare the glaze.
  • For the glaze add the powdered sugar and 4 tbsp. of lemon juice to a bowl and mix together until combined.
  • The glaze needs to be just a little thick to coat the donuts. If it’s too thick then add a little more lemon juice.
  • Dip the top of each donut into the glaze, letting the glaze fall over the sides and place on a wire rack to allow glaze to harden for a few minutes.
