Baked Lemon Blueberry Donuts With Lemon Glaze
These delicious donuts are perfect for breakfast, brunch or dessert. They make any weekend, holiday or social event even more special.
Tips For Making Baked Donuts
To make this recipe you’ll need a donut pan.
You can use a large Ziploc storage bag or a piping bag if you prefer to add batter to pan. Just scoop the batter into the bag and cut a good 1/2 inch to an inch off the corner of your bag. The opening needs to be large enough to fit blueberries through. Or you can just add the batter to the donut pan with a large spoon.
Cooking time is between 8 to 10 minutes. Since ovens heating elements can vary I recommend checking them at 8 minutes. If toothpick inserted in donut comes out clean they are done.
Gather all your ingredients before you start to make it easier and save time.

Ingredients
- frozen or fresh blueberries
- fresh lemon juice
- lemon zest from 1 lemon
- unsalted butter, melted
- vegetable oil
- granulated sugar
- eggs
- vanilla
- milk
- self rising flour

Glaze Ingredients
- fresh lemon juice
- powdered sugar
How To Make Lemon Blueberry Donuts
Preheat oven to 425 degrees. Spray the wells of a donut pan with non-stick spray.
Add the sugar, vegetable oil and melted butter to a large bowl and mix until well combined.


Next add in the eggs, vanilla, milk, lemon juice and lemon zest and mix until blended.


Then add in the flour and stir until combined.

Coat the blueberries in a spoonful of flour to prevent them from sinking to the bottom then gently fold in the blueberries.


Using either a piping bag or large spoon, pipe or spoon the batter into the prepared donut pan, filling 3/4 of the way full.

Bake for 8-10 minutes, until the tops are a light golden brown and a toothpick inserted in donut comes out clean.
Remove from the oven and allow to cool in pan for about 10 minutes then transfer to wire rack and prepare the glaze.

Preparing The Glaze
Add the powdered sugar and 4 tablespoons of lemon juice to a bowl and stir until combined.
The glaze needs to be just a little thick to coat the donuts. If it’s too thick then you can add a little more lemon juice.

Glaze The Donuts
Dip the top of each donut into the glaze, letting the glaze fall over the sides and then place on a wire rack to allow glaze to harden for a few minutes.
