Corn Rice Recipe

This delicious Corn Rice recipe is a simple side dish that combines rice, sweet corn kernels, chicken broth, and plenty of buttery goodness.

Ingredients

  • cup long grain rice (rinsed)
  • cups chicken broth
  • 1 can chicken and rice soup
  • ½ cup butter
  • ½ cup diced onion
  • ½ cup frozen corn (you can use canned)

Instructions

  • Preheat oven to 425 degrees F and prepare 8x8 baking dish.
  • Rinse the rice in a strainer until the water is no longer cloudy and runs clear.
  • Slice butter into ½ tablespoons slices, 16 total, and set aside.
  • In a large bowl add rice, chicken broth, chicken and rice soup, onion and corn, stir
    together and pour into baking dish.
  • Add slices of butter evenly into the mixture.
  • Cover with foil and bake for 30 - 40 minutes (depending on what type of rice you
    use).
  • Remove from oven and fluff up rice with a fork.
  • Serve hot and enjoy!

Notes

Store leftover rice in an airtight container in the refrigerator for up to 3 days.
