The best part about this corn rice is how hands-off it is to prepare. Just stir together the ingredients, pour into a baking dish, cover, and let the oven do all the work! I like to bake this in the oven while my husband is grilling chicken or steak.

  • Rice: Long grain white rice gives you those perfect, separated grains. But you can use other non-instant rice varieties too.
  • Chicken Broth: The liquid for cooking the rice and adding savory flavor. Vegetable or beef broth work great too.
  • Chicken and Rice Soup: This condensed canned soup adds creaminess and boosts the chicken flavors. Cream of mushroom or celery soup also works.
  • Butter: Using butter provides richness to the corn rice.
  • Onion: Fresh diced onion adds a touch of flavor and texture.
  • Frozen Corn: This convenient veggie adds pops of color and natural sweetness. You can also use drained canned corn.

How To Make This Corn Rice Recipe

Start by preheating your oven to 425°F. Grease an 8x8 baking dish and set it aside.

Rinse and drain your rice. Then, in a large mixing bowl, stir together the uncooked rice, chicken broth, condensed chicken soup, diced onion, and frozen corn until fully combined.

Transfer this mixture to your prepared baking dish and smooth the top into an even layer.

Next, place slices of cold butter evenly across the surface of the rice mixture. You'll use half a cup of butter, cut into about 16 slices.

Cover the dish tightly with aluminum foil and bake for 30-40 minutes, until the rice is tender. The exact timing will depend on what type of rice you're using. White long grain should take around 30 minutes.

Remove the foil and fluff everything together with a fork. The melted butter will be distributed throughout and the rice will have absorbed the broth and gained a wonderful creamy texture.

Can I use Minute Rice?

For best texture, avoid instant or minute rice varieties, which would likely overcook in the baking time.

My rice didn't cook through, what went wrong?

Be sure to use the proper rice to liquid ratio and cook for the full time specified. If your rice still seems underdone, re-cover and return to the oven for 10 more minutes.

Can I use brown rice instead of white rice?

Brown rice will require additional liquid and a much longer baking time to cook through properly.

Recipe Variations

  • Add in meat or veggies. Add diced bell peppers, celery, shredded chicken, or ham for extra protein and veggies.
  • Make it vegetarian. Substitute cream of mushroom or cream of celery soup for the chicken soup and use vegetable broth instead of chicken broth.
  • Make it cheesy. Stir in shredded cheddar cheese during the last 5 minutes for cheesy rice.
  • Garnish it. Top with sliced green onions, fresh parsley, or garlic butter for a flavor boost.

Storing and Freezing

Store: Leftovers can be completely cooled, covered tightly or placed in an airtight container, and refrigerated for up to 4 days. When reheating, you may want to add a splash of broth to loosen it up. 

Freeze: Freezing this dish is not recommended as it will negatively affect the texture of the rice.

Recipe Tips

  • Don't uncover or stir the rice during baking. Let it bake undisturbed.
  • Be sure to cover the dish tightly with foil to trap in steam and cook the rice properly.
  • This might seem like a lot of butter to use for one dish, but I promise it makes it totally luxurious. You can reduce the amount of butter if you prefer.
  • Go easy when fluffing the finished dish- always use a fork and never a spoon or the rice can become mushy.

Ingredients
  

  • cup long grain rice (rinsed)
  • cups chicken broth
  • 1 can chicken and rice soup
  • ½ cup butter
  • ½ cup diced onion
  • ½ cup frozen corn (you can use canned)

Instructions
 

  • Preheat oven to 425 degrees F and prepare 8x8 baking dish.
  • Rinse the rice in a strainer until the water is no longer cloudy and runs clear.
  • Slice butter into ½ tablespoons slices, 16 total, and set aside.
  • In a large bowl add rice, chicken broth, chicken and rice soup, onion and corn, stir
    together and pour into baking dish.
  • Add slices of butter evenly into the mixture.
  • Cover with foil and bake for 30 - 40 minutes (depending on what type of rice you
    use).
  • Remove from oven and fluff up rice with a fork.
  • Serve hot and enjoy!

Notes

Store leftover rice in an airtight container in the refrigerator for up to 3 days.
