Creamy Parmesan Tomato Soup

Ingredients

  • 1 cup canned tomato sauce
  • 1 cup canned diced tomatoes
  • 4 cups chicken broth
  • 1/2 cup half and half
  • 1/2 cup fresh grated Parmesan
  • 2 tsp crushed garlic
  • 2 tbsp butter
  • 2 tbsp all purpose flour
  • 1 small onion, diced
  • 1 1/2 tsp dried basil
  • Salt and pepper to taste

Instructions

  • Saute the diced onions with butter over high heat until onions are softened and golden brown.
  • Add in flour and cook for 1 minute until flour begins to brown. 
  • Next, stir in the tomato sauce, diced tomatoes, broth, Parmesan and seasonings. Simmer on low heat for 15 minutes, stirring occasionally.
  • Use a immersion blender to puree the onion and diced tomatoes.
  • Turn off the heat and stir in half and half.
  • Serve with crackers, croutons, or grilled cheese for a hearty cold weather dinner.
