- 1 cup canned tomato sauce
- 1 cup canned diced tomatoes
- 4 cups chicken broth
- 1/2 cup half and half
- 1/2 cup fresh grated Parmesan
- 2 tsp crushed garlic
- 2 tbsp butter
- 2 tbsp all purpose flour
- 1 small onion, diced
- 1 1/2 tsp dried basil
- Salt and pepper to taste
Saute the diced onions with butter over high heat until onions are softened and golden brown.
Add in flour and cook for 1 minute until flour begins to brown.
Next, stir in the tomato sauce, diced tomatoes, broth, Parmesan and seasonings. Simmer on low heat for 15 minutes, stirring occasionally.
Use a immersion blender to puree the onion and diced tomatoes.
Turn off the heat and stir in half and half.
Serve with crackers, croutons, or grilled cheese for a hearty cold weather dinner.
