Creamy Parmesan Tomato Soup
Tomato soup is one of my favorite comfort foods. I get so excited when the weather starts cooling off and the first thing I do is toss together a pot of soul warming soup!

This Creamy Parmesan Tomato Soup Recipe is my go to soup for fall or winter nights. It is tasty by itself or served with your favorite grilled cheese sandwich.
I love the rich creamy Italian flavor that it has and that it is so hearty considering it's a meatless meal.
Creamy Parmesan Tomato Soup Ingredients
To make this delicious Creamy Parmesan Tomato Soup you will need tomato sauce, diced tomatoes, half and half, chicken broth, fresh grated Parmesan, garlic, butter, flour, onion, dried basil, salt and pepper.

How To Make Creamy Parmesan Tomato Soup
Roughly chop onion. If you want a smoother soup but don’t want to use the Immersion blender you can dice them up finely to save work later. Saute the diced onions with butter over high heat until onions are softened and golden brown.

Add in flour and cook for 1 minute until flour begins to brown. Smells good doesn't it? Butter and onions sauteed are my favorite scent, they are perfume to a foodie!
Next you will stir in the tomato sauce, diced tomatoes, broth, Parmesan and seasonings. Simmer on low heat for 15 minutes, stirring occasionally.
If you want a totally smooth and creamy soup use your Immersion blender to puree up the onion and diced tomatoes. I highly recommend you do this, it gives you all the delicious flavors with a smooth texture that is tasty.

Turn off the heat and stir in half and half.
Serve with crackers, croutons, rolls or grilled cheese for a hearty cold weather dinner.

Ingredients
- 1 cup canned tomato sauce
- 1 cup canned diced tomatoes
- 4 cups chicken broth
- 1/2 cup half and half
- 1/2 cup fresh grated Parmesan
- 2 tsp crushed garlic
- 2 tbsp butter
- 2 tbsp all purpose flour
- 1 small onion, diced
- 1 1/2 tsp dried basil
- Salt and pepper to taste
Instructions
