These Frankenstein Cupcakes are a fun, spooky treat perfect for Halloween. All you need is a box of cake mix, frosting, and fun decorations.

Ingredients

  • 16 ounce box yellow cake mix (plus ingredients needed to prepare cake)
  • 16 ounce tub vanilla frosting
  • Green gel food coloring
  • 48 candy eyes
  • Black decorating icing
  • Chocolate sprinkles
  • Cupcake liners

Instructions

  • Prepare cake mix according to package instructions for 24 cupcakes in a cupcake pan with liners.
  • Bake cupcakes per package directions and allow them to fully cool on a wire rack.
  • Mix together vanilla frosting and a few drops of green gel food coloring until well combined.
  • Spread or pipe the frosting onto the cooled cupcakes.
  • Add two candy eyes to each cupcake.
  • Use black decorating icing to create the mouth and scars for the face.
  • Add chocolate sprinkles for the hair.
  • Serve immediately or store in an airtight container until ready to serve. Enjoy!

Notes

Once decorated, keep your Frankenstein Cupcakes in an airtight container at room temperature. They'll stay fresh for up to 3 days. 
Gel food coloring gives a more vibrant color than liquid food coloring. Regular food coloring can be used, but more products may be required to reach a deep green color.
