I make these Frankenstein Cupcakes every October. They're a hit at school Halloween parties and have become a tradition in our house. The best part is the kids can help decorate them, which always leads to lots of giggles and creative monster faces.

This recipe is really flexible. While I used a yellow cake mix, chocolate works too - it gives the cupcakes a darker, spookier look. Sometimes I add a bit of green food coloring to the cake batter for an extra burst of color!

Cream cheese frosting works just as well as vanilla, too. It gives a tangy flavor that balances out the sweetness nicely.

I usually make these cupcakes the day before the party and store them in an airtight container. This saves time on the day of the event. Just bring them to room temperature before serving for the best taste and texture.

  • Yellow Cake Mix - Any brand works well. For a darker look, you can use chocolate cake mix instead.
  • Vanilla Frosting - Store-bought is quick and easy. If you prefer homemade, a basic buttercream works great too.
  • Green Gel Food Coloring - Gel gives a more vibrant color than liquid food coloring.
  • Candy Eyes - Found in most baking aisles. If unavailable, you can use white chocolate chips with a dot of black icing.
  • Black Decorating Icing - Comes in tubes for easy use.
  • Chocolate Sprinkles - These create Frankenstein's hair. For a different look, you could use black sanding sugar.
  • Cupcake Liners - Green or black liners enhance the Halloween theme, but any color works.

How To Make Frankenstein Cupcakes

Let's start by preheating the oven and getting our cupcake pan ready. Line it with the paper liners.

Now, grab your yellow cake mix and follow the instructions on the box. It usually involves some eggs, oil, and water. Mix it all up until it's smooth. If you're feeling extra spooky, add a drop or two of green food coloring to the batter.

Fill each liner about two-thirds full with batter. Pop them in the oven and let them bake until they're golden and a toothpick comes out clean when you poke the center.

Once they're done, let the cupcakes cool completely on a wire rack. This is important - if they're warm when we frost them, we'll have a melty mess on our hands!

While the cupcakes are cooling, let's make our monster-green frosting. Take your vanilla frosting and add a few drops of green gel food coloring. Mix it up until you get that perfect Frankenstein shade.

Now comes the fun part - decorating! Spread or pipe the green frosting onto each cupcake. Don't worry about making it too smooth - Frankenstein's not known for his polished look!

Next, give each cupcake two candy eyes. You can place them however you like - straight, crooked, close together, or far apart. Each monster can have its own personality!

Using the black decorating icing, draw on a mouth and a few scars. You can make some cupcakes smiling, some frowning - whatever you feel like!

Finally, sprinkle on some chocolate sprinkles for hair.

And there you have it - a whole batch of adorable Frankenstein cupcakes ready for the Halloween party!

Make-Ahead, Storing & Freezing

Make Ahead: These Frankenstein Cupcakes are great for making ahead. You can bake the cupcakes a day in advance and store them in an airtight container at room temperature. Decorate them the day you plan to serve for the freshest look.

Store: Once decorated, keep your Frankenstein Cupcakes in an airtight container at room temperature. They'll stay fresh for up to 3 days. If your room is warm, you might want to refrigerate them to keep the frosting from melting.

Freeze: You can freeze unfrosted cupcakes for up to 2 months. Wrap them individually in plastic wrap and store in a freezer bag. Thaw at room temperature before decorating. I don't recommend freezing the decorated cupcakes as the candy eyes and decorations might not hold up well.

Recipe Tips

  • Let your cupcakes cool completely before frosting. This prevents the frosting from melting and sliding off.
  • If using a piping bag for frosting, fill it only halfway. This gives you more control and makes less mess.
  • For neater lines when drawing the mouth and scars, practice on a plate first to get comfortable with the icing flow.
  • If you're making these with kids, pre-portion the decorations into small bowls. This makes it easier for little hands and reduces mess.

Can I use homemade cake batter instead of a box mix?

Absolutely! Any vanilla or yellow cake recipe that makes 24 cupcakes will work great. Just make sure the batter isn't too thin, or the decorations might sink.

What if I can't find candy eyes?

No problem! You can make your own using white chocolate chips or round white candies. Just add a dot of black icing for the pupil.
