Fruity Chicken Curry Salad

This delicious Fruity Chicken Curry Salad gives you a different twist on traditional chicken salad and is perfect for lunch or dinner.

Ingredients

  • 4 skinless, boneless chicken breast halves - cooked and diced
  • 1 stalk celery, diced
  • 4 green onions, chopped
  • 1 Golden Delicious apple - peeled, cored and diced
  • 1/3 cup golden raisins
  • 1/2 cup seedless green grapes, halved
  • 1/2 cup chopped toasted pecans
  • 1/8 tsp ground black pepper
  • 1/2 tsp curry powder
  • 3/4 cup mayonnaise

Instructions

  • In small bowl mix together mayonnaise, pepper and curry.
  • In a large bowl add the chicken, celery, onion, apple, raisins, grapes, and pecans.
  • Fold the mayonnaise mixture into ingredients in large bowl and mix until combined.
  • Chill several hours or overnight (to help develop the flavor) before serving.
